Ingredients:​

    • 2-3 tablespoons mitmita (Ethiopian spice blend) or cayenne pepper (adjust to taste)
    • 1 teaspoon ground cardamom
    • Salt, to taste
  • For the Sides:
    • Injera (Ethiopian flatbread)
    • Ayib (Ethiopian cottage cheese) or ricotta cheese
    • Gomen (collard greens) or kale, sautéed with onions and garlic

Instructions:​

1. Prepare the Niter Kibbeh:​

  • If you don’t have niter kibbeh, you can make it by melting butter and simmering it with spices like cardamom, cinnamon, cumin, turmeric, and cloves. Strain the spices and use the clarified butter.

2. Prepare the Beef:​

  • Ensure the beef is very fresh. Finely mince the beef using a sharp knife or ask your butcher to do it.
  • Place the minced beef in a bowl.

3. Season the Kitfo:​

  • Melt the niter kibbeh in a small saucepan over low heat.
  • Pour the melted niter kibbeh over the minced beef.
  • Add the mitmita (or cayenne pepper), ground cardamom, and salt to the beef. Mix well until the meat is thoroughly coated with the spices and butter.

4. Serve:​

  • Traditionally, Kitfo is served raw, but you can also lightly cook it over low heat if preferred.
  • Place the Kitfo in a serving dish.
  • Serve with injera, ayib (or ricotta cheese), and sautéed collard greens or kale on the side.
