Almond Flour Pancake Recipe

Hey everyone! I’ve been experimenting with almond flour lately, and I came up with a pancake recipe that’s super fluffy and delicious. Perfect for a lazy weekend breakfast or a quick weekday treat. Thought I’d share it with you all!

Ingredients:

  • 1 cup almond flour
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any milk you like)
  • 1 tbsp honey or maple syrup (optional, but adds a nice touch!)
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract
  • A pinch of salt
  • A dash of cinnamon (if you’re into that cozy flavor 🍂)
Instructions:

  1. In a bowl, mix the almond flour, baking powder, salt, and cinnamon.
  2. In another bowl, whisk together the eggs, almond milk, honey, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it with coconut oil or butter.
  5. Pour small amounts of batter onto the skillet (about 2-3 tbsp per pancake) and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve with your favorite toppings—I love mine with fresh berries and a drizzle of maple syrup. 🍓🍯
