Hey everyone! I’ve been experimenting with almond flour lately, and I came up with a pancake recipe that’s super fluffy and delicious. Perfect for a lazy weekend breakfast or a quick weekday treat. Thought I’d share it with you all!

- 2 large eggs
- 1/4 cup unsweetened almond milk (or any milk you like)
- 1 tbsp honey or maple syrup (optional, but adds a nice touch!)
- 1/2 tsp baking powder
- 1/4 tsp vanilla extract
- A pinch of salt
- A dash of cinnamon (if you’re into that cozy flavor )
- In a bowl, mix the almond flour, baking powder, salt, and cinnamon.
- In another bowl, whisk together the eggs, almond milk, honey, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium heat and lightly grease it with coconut oil or butter.
- Pour small amounts of batter onto the skillet (about 2-3 tbsp per pancake) and cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve with your favorite toppings—I love mine with fresh berries and a drizzle of maple syrup.
