Hey everyone! I just had to share this super easy Almond Flour Pancake recipe I’ve been making lately. It’s a great alternative if you’re looking for something gluten-free but still fluffy and delicious! Thought I’d see if anyone else has tried something similar or has tips to make it even better.

Ingredients:
- 1 cup almond flour
- 2 eggs
- 1/4 cup milk (I use almond milk, but any will work!)
- 1 tbsp maple syrup (or honey)
- 1/2 tsp baking powder
- A pinch of salt
- 1/2 tsp vanilla extract (optional but yummy!)
- In a bowl, whisk together the almond flour, baking powder, and salt.
- In another bowl, mix eggs, milk, maple syrup, and vanilla extract.
- Combine the wet and dry ingredients, and stir until smooth.
- Heat a non-stick pan over medium heat, lightly grease, and pour in the batter (I make small pancakes to keep them easy to flip).
- Cook for about 2-3 minutes per side or until golden.
