Hello friends, I tried out this amazing Amish Breakfast Casserole recipe this morning, and it was a hit! It's a hearty and delicious way to start your day, perfect for a weekend brunch with family and friends. Here's how you can make it:

  • 1 pound of bacon, diced
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 1/2 cups of shredded cheddar cheese
  • 1 1/2 cups of shredded mozzarella cheese
  • 12 eggs
  • 1 cup of milk
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of dried parsley
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of dried basil
  • 1/2 teaspoon of red pepper flakes (optional)
  • 1 package (30 ounces) of frozen shredded hash browns, thawed
Instructions:
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large skillet, cook the diced bacon over medium-high heat until it's browned and crispy. Remove the bacon from the skillet and set it aside, leaving the bacon grease in the skillet.
  3. Add the chopped onion and bell peppers to the skillet with the bacon grease. Cook until the vegetables are tender, about 5 minutes. Remove from heat and set aside.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, onion powder, paprika, parsley, oregano, thyme, basil, and red pepper flakes (if using).
  5. Spread the thawed hash browns in the bottom of the greased baking dish. Layer the cooked bacon, onion, and bell peppers over the hash browns. Sprinkle the shredded cheddar and mozzarella cheese over the top.
  6. Pour the egg mixture evenly over the cheese and other ingredients in the baking dish.
  7. Bake in the preheated oven for 45-55 minutes, or until the casserole is set in the center and the top is golden brown.
  8. Let it cool for a few minutes before serving. Enjoy!
