This Apricot Glazed Chicken is a delightful mix of sweet and savory, with a glaze that’s both tangy and rich. I tried this last week for a quick dinner, and it was such a hit that I knew I had to share it. The apricot glaze not only adds a beautiful shine but also gives the chicken a flavor that’s just irresistible. It’s simple, quick, and perfect for a weeknight meal.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup apricot preserves
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh thyme or parsley for garnish (optional)
Instructions:
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
- Make the Glaze: In a small bowl, mix together the apricot preserves, soy sauce, Dijon mustard, apple cider vinegar, and minced garlic until well combined.
- Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Glaze the Chicken: In the same skillet, pour in the apricot glaze mixture. Let it simmer for a few minutes until it thickens slightly. Return the chicken to the skillet, turning it to coat evenly with the glaze.
- Serve: Once the chicken is fully coated and the glaze has thickened a bit more, remove from heat. Garnish with fresh thyme or parsley if desired, and serve hot.
