I recently tried making Argentinian Churrasco, and it was an absolute hit! This traditional Argentinian dish features grilled steak that is beautifully seasoned and cooked to perfection. Served with chimichurri sauce, it’s a flavorful and hearty meal that’s perfect for grilling enthusiasts. Here’s how you can make this mouthwatering dish at home:
Ingredients:
For the Churrasco:
- 2 lbs (900g) skirt steak or flank steak
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
For the Chimichurri Sauce:
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, finely chopped (optional)
- 4 cloves garlic, minced
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper, to taste
Instructions:
1. Prepare the Steak:
- In a small bowl, combine the minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper. Add the olive oil and mix well to form a paste.
- Rub the spice mixture all over the skirt steak, ensuring it’s evenly coated. Let the steak marinate for at least 30 minutes, or overnight for best results.
2. Make the Chimichurri Sauce:
- In a medium bowl, combine the chopped parsley, cilantro (if using), minced garlic, olive oil, red wine vinegar, lemon juice, red pepper flakes, salt, and black pepper.
- Mix well and let the chimichurri sauce sit for at least 30 minutes to allow the flavors to meld.
3. Grill the Steak:
- Preheat your grill to high heat.
- Once the grill is hot, place the marinated steak on the grates. Grill the steak for about 3-4 minutes per side for medium-rare, or until it reaches your desired level of doneness.
- Remove the steak from the grill and let it rest for a few minutes before slicing.
4. Serve:
- Slice the steak against the grain into thin strips.
- Serve the grilled steak with a generous drizzle of chimichurri sauce on top.
- Accompany the Churrasco with your favorite sides, such as grilled vegetables, roasted potatoes, or a fresh salad.
