I recently made Armenian Gata, and it was an absolutely delightful experience! This traditional sweet bread, often enjoyed during special occasions, has a beautiful flaky texture and a rich, sweet filling that melts in your mouth. The buttery aroma that fills your kitchen while baking is irresistible! Here’s how you can create your own Gata at home:
Ingredients:
- For the Dough:
- 4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup plain yogurt (or sour cream)
- 1/2 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg (for egg wash, optional)
- For the Filling:
- 1 cup granulated sugar
- 1 cup walnuts or almonds, finely chopped
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon (optional)
- 1-2 tablespoons melted butter (for brushing)
Instructions:
1. Prepare the Dough:
- In a large bowl, mix the warm yogurt (or sour cream) with the yeast and let it sit for about 5-10 minutes until bubbly.
- In another bowl, cream the softened butter and sugar together until light and fluffy.
- Gradually mix in the yogurt mixture, baking soda, and salt, then gradually add the flour until a soft dough forms.
2. Knead the Dough:
- Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth. Cover with a kitchen towel and let it rise in a warm place for about 1-2 hours or until doubled in size.
3. Make the Filling:
- In a medium bowl, combine the chopped nuts, sugar, vanilla extract, and cinnamon (if using). Mix well to combine.
4. Roll Out the Dough:
- Once the dough has risen, punch it down and divide it into two equal parts. Roll out each part into a large rectangle, about 1/4-inch thick.
5. Assemble the Gata:
- Spread half of the filling mixture over each rolled-out dough rectangle. Roll the dough tightly into a log, then shape it into a spiral or coil (like a snail) and place it onto a parchment-lined baking sheet.
6. Second Rise:
- Cover the shaped Gata with a towel and let it rise again for about 30 minutes.
7. Preheat and Bake:
- Preheat your oven to 350°F (175°C). If using, beat the egg and brush it over the top of the Gata for a shiny finish.
- Bake for about 30-35 minutes or until golden brown.
8. Cool and Serve:
- Once baked, remove from the oven and brush the top with melted butter for added richness. Let it cool slightly before slicing.
