**Ingredients:**
- 2 lbs (900g) lamb shoulder or leg, cut into chunks
- 1 cup dried chickpeas (soaked overnight) or 2 cups canned chickpeas
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup diced tomatoes
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1/2 tsp cumin
- Salt and pepper to taste
**Instructions:**
1. If using dried chickpeas, drain and rinse them. Cook in boiling water for about 1 hour or until tender; drain.
2. Heat olive oil in a large pot and brown the lamb chunks on all sides.
