**Ingredients:**
- 4 lbs (1.8 kg) lamb leg or shoulder, bone-in
- 1/4 cup olive oil
- 4 cloves garlic, minced

- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup white wine (optional)
**Instructions:**
1. Preheat your oven to 375°F (190°C) if using a conventional oven; for a clay oven, prepare it according to the manufacturer's instructions.
2. In a bowl, combine olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
3. Rub the mixture all over the lamb, making sure it's well-coated.
