Asian-Inspired Broccoli Recipe

- 2 lbs fresh broccoli
- 1 tablespoon cornstarch
- 1 teaspoon granulated sugar
- 1⁄8 teaspoon salt
- 1⁄2 cup vegetable broth (use vegetable broth for a vegetarian version)
- 2 tablespoons soy sauce
- 1 garlic clove, minced
- 1⁄4 cup vegetable oil
Directions
- Prepare the Broccoli
- Trim and discard the tough ends of the broccoli stalks. Wash the broccoli thoroughly. Cut the broccoli into florets and set aside. Cut the stalks into 1/2-inch pieces and set aside.
- Prepare the Sauce
- In a small bowl, combine the cornstarch, sugar, and salt. Add the vegetable broth and soy sauce, stirring until the mixture is smooth. Set aside.
- Cooking
- Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and sauté until lightly browned and aromatic.
- Stir-Fry
- Add the broccoli florets and stalk pieces to the wok or skillet. Stir-fry for 2 minutes, stirring constantly to coat the broccoli with the oil and garlic.
- Steam
- Cover the wok or skillet with a lid and steam the broccoli for an additional 2 minutes. This helps to soften the broccoli slightly.
- Add Sauce
- Pour the prepared sauce mixture over the broccoli in the wok or skillet. Stir constantly to coat the broccoli evenly with the sauce.
- Finish
- Continue to cook and stir for about 2 minutes, or until the sauce thickens and coats the broccoli completely.
