Hey everyone! I just whipped up this super fresh and flavorful Asian Salad, and I had to share it with you all. It’s perfect for summer and so easy to make. Hope you love it as much as I do!

Ingredients:
- 2 cups mixed greens (lettuce, spinach, arugula)
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1/2 cup edamame (shelled)
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup roasted peanuts (optional)
- 1 avocado, sliced
- 3 tbsp soy sauce (or tamari for gluten-free)
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 garlic clove, minced
- 1 tsp grated ginger
- 1 tsp sriracha (optional, for a kick)
- Juice of 1 lime
- In a large bowl, combine the mixed greens, red cabbage, carrots, bell pepper, cucumber, edamame, green onions, and cilantro.
- In a small bowl, whisk together all the dressing ingredients until well combined.
- Pour the dressing over the salad and toss everything together until evenly coated.
- Top with avocado slices and roasted peanuts if you like a bit of crunch.
- Serve immediately and enjoy!
