Ingredients:
- 6 cups chicken broth
- ½ cup rice
- 3 large eggs
- Juice of 2 lemons
- Shredded chicken (optional)
- Salt and pepper to taste
Instructions:
1. Bring the chicken broth to a boil, then add the rice and cook until tender, about 15 minutes.
2. In a bowl, whisk the eggs and lemon juice together until frothy.
3. Slowly temper the egg mixture by adding a ladleful of hot broth, whisking constantly.
4. Gradually stir the egg-lemon mixture back into the soup, whisking to avoid curdling.
