Ingredients:
- For the Baked Apples:
- 4 medium apples (such as Granny Smith, Honeycrisp, or Gala)
- 1/4 cup water
- 1 tablespoon lemon juice
- For the Spiced Quinoa Crumble:
- 1/2 cup rolled quinoa flakes
- 1/4 cup chopped walnuts or pecans
- 1/4 cup chopped pitted dates
- 2 tablespoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- A pinch of salt
Prepare the Apples:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Core the apples, leaving the bottom intact. Brush the inside of the apples with lemon juice.
- In a medium bowl, combine the quinoa flakes, chopped nuts, chopped dates, cinnamon, nutmeg, ginger, and salt. Mix well.
- Place the apples in the prepared baking dish. Pour a little water (about 1 tablespoon) into the bottom of each apple.
- Fill the apples with the spiced quinoa crumble mixture.
- Bake for 30-35 minutes, or until the apples are tender and the crumble topping is golden brown.
