Ingredients:

  • 4 cod fillets
  • 2 large potatoes, peeled and thinly sliced
  • 1 lemon, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Tartar sauce, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Pat dry the cod fillets with paper towels and season with salt and pepper on both sides.
  3. Arrange the thinly sliced potatoes on a baking sheet lined with parchment paper, slightly overlapping them to form a base for each cod fillet.
  4. Drizzle olive oil over the potatoes and season with salt and pepper.
