- 4 cod fillets
- 2 large potatoes, peeled and thinly sliced
- 1 lemon, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Tartar sauce, for serving
Instructions:
- Preheat your oven to 400°F (200°C).
- Pat dry the cod fillets with paper towels and season with salt and pepper on both sides.
- Arrange the thinly sliced potatoes on a baking sheet lined with parchment paper, slightly overlapping them to form a base for each cod fillet.
- Drizzle olive oil over the potatoes and season with salt and pepper.
- Place a lemon slice on each potato bed.
- Lay a cod fillet on top of each lemon slice.
- Season the tops of the cod fillets with a bit more salt and pepper, and drizzle with a little more olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and the potatoes are crispy and golden brown.
- Once cooked, remove from the oven and garnish with chopped fresh parsley.
- Serve hot with tartar sauce on the side.
