Hey everyone! I just made this Baked Cod with Garlic and Herb Ritz Crumbs the other night, and I had to share. It was super easy and SO good! The Ritz crumbs give the cod this crispy, buttery texture that's just chef's kiss . Plus, it’s one of those dishes that feels fancy but takes barely any effort. Here’s how I did it:

- 4 cod fillets (about 6 oz each)
- 1 sleeve of Ritz crackers, crushed (I like to add a little extra for more crunch!)
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped (or dried works too!)
- 3 garlic cloves, minced
- 4 tbsp butter, melted
- Zest of 1 lemon
- Juice of half a lemon
- Salt and pepper to taste
- Olive oil spray or a drizzle
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil spray or a drizzle of olive oil.
- In a small bowl, mix the crushed Ritz crackers with the parsley, thyme, garlic, lemon zest, and melted butter. It should form a crumbly mixture that smells amazing!
- Season the cod fillets with salt, pepper, and a squeeze of lemon juice. Place them in the baking dish.
- Generously press the Ritz crumb mixture onto each fillet. Don’t be shy with it – the more the merrier!
- Bake for about 12-15 minutes, depending on the thickness of your fillets. The crumbs should be golden and crispy, and the cod should flake easily with a fork.
- Serve with extra lemon wedges on the side and maybe some steamed veggies or rice. It’s so simple, but it feels like a restaurant-quality dish!
