Ingredients:​

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup melted butter or vegetable oil (for drizzling)

For the Hot Honey Sauce:​

  • 1/2 cup honey
  • 2-3 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional, for extra heat)

Instructions:​

  1. Marinate the Chicken:
    • In a large bowl, mix the buttermilk with 1/2 teaspoon salt, 1/2 teaspoon black pepper, garlic powder, and paprika.
    • Add the chicken breasts or thighs to the bowl, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or up to overnight.
  2. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil and place a wire rack on top. This helps the chicken cook evenly and stay crispy.
  3. Prepare the Breading:
    • In one shallow bowl, place the flour.
    • In another shallow bowl, combine the panko breadcrumbs and grated Parmesan cheese.
  4. Bread the Chicken:
    • Remove the chicken from the buttermilk marinade, allowing any excess to drip off.
    • Dredge each piece of chicken in the flour, shaking off the excess.
    • Then dip the chicken back into the buttermilk mixture briefly before coating it in the panko-Parmesan mixture. Press the panko mixture onto the chicken to ensure it adheres well.
  5. Bake the Chicken:
    • Place the breaded chicken pieces on the wire rack. Drizzle the melted butter or vegetable oil over the chicken to help it crisp up in the oven.
    • Bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  6. Make the Hot Honey Sauce:
    • While the chicken is baking, prepare the hot honey sauce. In a small saucepan over low heat, combine the honey, hot sauce, apple cider vinegar, and red pepper flakes (if using). Stir until well combined and heated through. Do not let it boil.
  7. Coat the Chicken:
    • Once the chicken is done baking, remove it from the oven and let it cool slightly.
    • Drizzle or brush the hot honey sauce over the chicken pieces just before serving.
  8. Serve:
    • Serve the hot honey chicken with your favorite sides, such as roasted vegetables, coleslaw, or a simple green salad.
