  • 6 slices of deli ham (thicker cut works best)
  • 6 large eggs
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • Salt and pepper to taste
  • Fresh chives or parsley, chopped (for garnish)
  • Non-stick cooking spray or butter for greasing

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a standard muffin tin with cooking spray or butter.
  2. Prepare the Ham Cups:
    • Gently press each slice of ham into the muffin tin cups, forming little ham cups. The edges of the ham may stick out slightly, which is fine.
  3. Add Cheese:
    • Sprinkle a little bit of shredded cheese into the bottom of each ham cup.
  4. Crack the Eggs:
    • Crack one egg into each ham cup. If the eggs are too large, you can whisk them together in a bowl first and then pour a portion into each cup.
  5. Season:
    • Lightly season each egg with salt and pepper.
  6. Bake:
    • Bake in the preheated oven for about 12-15 minutes, or until the eggs are set to your desired doneness. If you like runny yolks, check them at 12 minutes. For firmer yolks, bake a little longer.
  7. Garnish and Serve:
    • Once done, remove the ham cups from the muffin tin using a spoon. Be careful as they will be hot.
    • Garnish with freshly chopped chives or parsley.

  • For extra flavor, you can add a sprinkle of herbs, such as thyme or oregano, to the eggs before baking.
  • If you prefer, you can add some sautéed vegetables (like spinach, mushrooms, or bell peppers) underneath the egg in each ham cup.
  • These baked eggs in ham cups can be made ahead of time and reheated in the microwave for a quick breakfast on busy mornings.
