Hey folks! So, I've been on a mission to find the perfect comfort food lately, and let me tell you, baked jacket potatoes have been hitting all the right spots! They're crispy on the outside, fluffy on the inside, and totally customizable with your favorite toppings.
Ingredients:
- Russet potatoes (1 per person)
- Olive oil
- Salt
- Toppings of your choice (think sour cream, cheese, bacon bits, chives, or whatever you fancy!)
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean under running water, then pat them dry with a kitchen towel.
- Pierce each potato a few times with a fork or knife to allow steam to escape during baking.
- Rub each potato with a little olive oil and sprinkle with salt. This helps to crisp up the skin while baking.
- Place the potatoes directly on the oven rack or on a baking sheet lined with foil for easy cleanup.
- Bake the potatoes for 45 minutes to 1 hour, or until the skin is crispy and the flesh is tender when pierced with a fork.
- Once the potatoes are done, remove them from the oven and let them cool slightly before handling.
- Cut a slit lengthwise in each potato and fluff up the insides with a fork.
- Load up your baked jacket potatoes with your favorite toppings and dig in!
