Have you ever tried a baked salmon? It's so good, but I want a dish with a twist, so here's another salmon recipe called Baked Salmon with Grapefruit Salad.
Ingredients:
For the Salmon:- 4 salmon fillets (about 6 ounces each)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 2 pink grapefruits, segmented
- 1 small red onion, thinly sliced
- 4 cups mixed salad greens
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped walnuts (optional)
- Salt and black pepper to taste
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions:
- Prepare the Salmon:
- Preheat your oven to 400°F (200°C).
- Season the salmon fillets with salt and black pepper.
- In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, and chopped parsley.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the olive oil mixture over the salmon fillets.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Prepare the Grapefruit Salad:
- In a large mixing bowl, combine the grapefruit segments, thinly sliced red onion, mixed salad greens, chopped cilantro, chopped mint, and chopped walnuts (if using).
- Toss gently to combine.
- Prepare the Dressing:
- In a small bowl, whisk together the extra virgin olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until well combined.
- Assemble the Salad:
- Drizzle the dressing over the grapefruit salad and toss gently to coat.
- Serve:
- Divide the grapefruit salad among serving plates.
- Place a baked salmon fillet on top of each salad.
- Garnish with additional chopped parsley or mint if desired.
- Serve immediately and enjoy!
