- 1 lb okra, cleaned and trimmed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can diced tomatoes
- ¼ cup fresh parsley, chopped
- ¼ cup olive oil
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 350°F, then sauté the onion and garlic in olive oil until soft.
2. Mix the sautéed onion with cooked rice, tomatoes, parsley, salt, and pepper.
3. Stuff the okra with the rice mixture and place in a baking dish.
4. Drizzle with olive oil and bake for 30-35 minutes until the okra is tender.
