I whipped up these banana nut pancakes for breakfast, and they were a hit! Fluffy, sweet, and perfect for a cozy morning.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 ripe bananas, mashed
  • 1/4 cup chopped walnuts (or pecans)
  • 2 tbsp melted butter (plus extra for cooking)
Instructions:

  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, mashed bananas, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped nuts.
  4. Heat a non-stick skillet or griddle over medium heat and add a little butter.
  5. Pour about 1/4 cup of batter for each pancake and cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2 minutes until golden brown.
These pancakes are deliciously sweet and nutty—perfect for a weekend breakfast!
