I whipped up these banana nut pancakes for breakfast, and they were a hit! Fluffy, sweet, and perfect for a cozy morning.

Ingredients:
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 large egg
- 2 ripe bananas, mashed
- 1/4 cup chopped walnuts (or pecans)
- 2 tbsp melted butter (plus extra for cooking)
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, mashed bananas, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped nuts.
- Heat a non-stick skillet or griddle over medium heat and add a little butter.
- Pour about 1/4 cup of batter for each pancake and cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2 minutes until golden brown.
