Whenever my family and I hit up our favorite seaside joint, this is the first thing we order. There's just something about those plump, chilled shrimp swimming in a zingy cocktail sauce that screams "vacation vibes."

- 1 lb large shrimp, peeled and deveined (leave the tails on for that fancy look)
- 2 tbsp Old Bay seasoning
- 1 lemon, halved
- 1 cup ketchup
- 2 tbsp horseradish (more or less, depending on how much of a kick you want)
- 2 tbsp lemon juice
- 1 tsp Worcestershire sauce
- 1/2 tsp hot sauce (like Tabasco)
- 1/4 tsp celery salt
- A pinch of cayenne pepper (optional, if you like it spicy)

- First things first, let's get those shrimp ready! Bring a pot of water to a boil and add the Old Bay seasoning. Once it's boiling, drop in the shrimp and cook for 2-3 minutes, or until they're pink and opaque. Drain the shrimp and transfer them to a bowl of ice water to stop the cooking process.
- While the shrimp are chilling (literally), make the cocktail sauce. In a bowl, mix together the ketchup, horseradish, lemon juice, Worcestershire sauce, hot sauce, celery salt, and cayenne pepper (if using). Give it a good stir and taste it. Adjust the seasoning if needed – more lemon for tang, more horseradish for heat, you get the idea.
- Once the shrimp are cooled, peel off the shells, leaving the tails intact. Arrange them on a platter or in a fancy glass (or hey, even a humble bowl works!).
- Squeeze the lemon halves over the shrimp to add a bright, citrusy zing.
- Serve the shrimp with the cocktail sauce on the side for dipping. You can also provide some lemon wedges for an extra squeeze of flavor.
