Ingredients
- 1 can (16 ounces) vegetarian refried beans
- 1 cup salsa
- 1 cup cooked long grain rice
- 2 cups shredded cheddar cheese, divided
- 12 flour tortillas (6 inches)
- Optional: Shredded lettuce, sliced olives, halved grape tomatoes and sliced avocado
Directions
- Preheat the oven to 375ยฐF. In a spacious bowl, mix beans, salsa, rice, and 1 cup of cheese. Place approximately 1/3 cup of the mixture off-center on each tortilla. Fold the sides and ends over the filling and roll it up.
- Position the burritos in a greased 13x9-inch baking dish. Sprinkle the remaining 1 cup of cheese on top. Cover and bake until heated through, typically 20 to 25 minutes. Add desired toppings before serving.
