This dish is packed with flavor, combining tender rice with hearty beans, fresh veggies, and spices. Perfect for any meal!

- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups vegetable or chicken broth
- 2 tbsp olive oil
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
- Cook the Rice:
- In a medium pot, bring 2 cups of broth to a boil.
- Add the rice, reduce heat to low, cover, and simmer until the rice is tender and the liquid is absorbed (about 18-20 minutes for white rice, 40-45 minutes for brown rice).
- Sauté Vegetables:
- While the rice is cooking, heat olive oil in a large skillet over medium heat.
- Add the chopped onion and bell pepper, cooking until they are soft (about 5 minutes).
- Add the minced garlic and cook for another minute.
- Combine Ingredients:
- Stir in the black beans, diced tomatoes (with their juice), cumin, chili powder, salt, and pepper.
- Cook for about 5-7 minutes, until heated through and flavors are well combined.
- Mix and Serve:
- Once the rice is done, fluff it with a fork and add it to the skillet with the bean mixture.
- Stir well to combine and heat through.
- Garnish:
- Serve hot, garnished with fresh cilantro and lime wedges if desired.
