Beef and Red Wine Braised Stew
Ingredients:
- 1 Ā½ lbs beef chuck, cubed
- 2 cups red wine
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 3 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Olive oil for searing
- Heat olive oil in a large pot. Sear the beef cubes until browned on all sides.
- Remove the beef and set aside. In the same pot, sautƩ onions, garlic, and tomato paste until fragrant.
- Pour in the red wine to deglaze the pot, scraping up any browned bits.
- Add the beef back to the pot along with carrots, potatoes, thyme, bay leaves, and beef broth.
- Bring the stew to a simmer, cover, and cook on low heat for 2-3 hours, or until the beef is tender.
- Season with salt and pepper, then serve with warm bread.
