Bell Pepper & Potato Skillet Bake
Ingredients:
- 4 medium potatoes, thinly sliced
- 2 large bell peppers (any color), sliced into strips
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 teaspoon smoked paprika
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
- 3 tablespoons olive oil
- 1/2 cup vegetable or chicken broth
- 1 cup shredded mozzarella or your favorite cheese
- Fresh parsley or basil for garnish
- Optional: a pinch of red pepper flakes for some heat

Preheat your oven to 400°F (200°C). Lightly grease a large oven-safe skillet or baking dish with a bit of olive oil.
- Layer it up!
Start by arranging half of the sliced potatoes in an even layer at the bottom of the skillet. Sprinkle with a pinch of salt, pepper, and half of the smoked paprika and Italian herbs.
- Add the veggies:
On top of the potatoes, layer the sliced bell peppers, onions, and minced garlic. Drizzle with 1 tablespoon of olive oil and season with a little more salt, pepper, and the remaining spices. Scatter the cherry tomatoes evenly over the vegetables.
- Top it off:
Add the remaining potato slices on top, seasoning them similarly with salt, pepper, and a sprinkle of paprika and herbs. Pour the vegetable or chicken broth over the entire skillet to keep everything moist during baking.
- Bake to perfection:
Cover the skillet with aluminum foil and place it in the preheated oven. Bake for 35 minutes, allowing the potatoes to tenderize and the flavors to meld together.
- Cheese, please!
After 35 minutes, remove the foil and sprinkle the shredded cheese evenly over the top. Return the skillet to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly with a golden brown finish.
- Garnish and serve:
Once out of the oven, let the skillet bake cool for a few minutes. Garnish with freshly chopped parsley or basil for a burst of color and freshness.
