- 4 cups cooked rice (or 1 cup uncooked rice)
- 1 cup frozen peas, thawed
- 2 tablespoons finely diced carrots
- 2 eggs, beaten
- 1/2 cup diced onion
- 1 1/2 tablespoons butter
- 2 tablespoons soy sauce
- Salt and pepper, to taste
- Prepare the Rice:If using uncooked rice, cook it according to package instructions (typically, bring 2 cups of water to a boil, add rice and a pinch of salt, cover, reduce heat, and simmer for 20 minutes). Once cooked, transfer the rice to a large bowl and let it cool in the refrigerator until near room temperature.
- Prepare the Ingredients:
- In a small pan over medium heat, scramble the eggs until fully cooked. Break the scrambled eggs into small, pea-size bits as you cook them.
- Once the rice has cooled, add thawed peas, finely diced carrots, scrambled egg bits, and diced onion to the bowl with the rice. Gently toss all the ingredients together.
- Cooking the Fried Rice:
- In a large frying pan or skillet, melt the butter over medium-high heat.
- When the butter has melted completely, add the bowl of rice mixture to the pan.
- Drizzle soy sauce over the rice and season with salt and pepper to taste.
