Ingredients:
For the Shortcake:
- 2 cups all-purpose flour
345×286 - 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries, etc.)
- 2 tablespoons sugar (adjust to taste)
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
1. Prepare the Berries:
- In a bowl, combine the mixed berries with sugar and lemon juice. Toss gently and let sit for at least 15 minutes to macerate.
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until just combined. Do not overmix.
- Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut into squares or circles using a biscuit cutter.
- Place the shortcakes on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
- In a chilled bowl, beat the heavy cream, sugar, and vanilla extract with an electric mixer until soft peaks form.
- Slice the shortcakes in half horizontally. Spoon some of the macerated berries onto the bottom half, add a dollop of whipped cream, and then top with the other half of the shortcake.
- Garnish with extra berries and a bit more whipped cream if desired.
