Hey everyone, I want to introduce you to a delightful treat: Berry Shortcake! 🍓🍰 It’s a sweet, fruity dessert with layers of tender shortcake, juicy berries, and fluffy whipped cream. Perfect for a summer dessert or any time you need a delicious pick-me-up! 😋✨

Ingredients:

For the Shortcake:
  • 2 cups all-purpose flour

  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
For the Berries:
  • 2 cups mixed berries (strawberries, blueberries, raspberries, etc.)
  • 2 tablespoons sugar (adjust to taste)
  • 1 tablespoon lemon juice
For the Whipped Cream:
  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
Instructions:

1. Prepare the Berries:

  • In a bowl, combine the mixed berries with sugar and lemon juice. Toss gently and let sit for at least 15 minutes to macerate.
2. Make the Shortcake:
  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Stir in the milk and vanilla extract until just combined. Do not overmix.
  • Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut into squares or circles using a biscuit cutter.
  • Place the shortcakes on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
3. Make the Whipped Cream:
  • In a chilled bowl, beat the heavy cream, sugar, and vanilla extract with an electric mixer until soft peaks form.
4. Assemble the Shortcakes:
  • Slice the shortcakes in half horizontally. Spoon some of the macerated berries onto the bottom half, add a dollop of whipped cream, and then top with the other half of the shortcake.
  • Garnish with extra berries and a bit more whipped cream if desired.

Hey all! I think using a mix of strawberries and raspberries makes the best combo for shortcake! Though, I sometimes sneak in blueberries too. 🍓🫐🍰
