Enchiladas are a crowd-pleaser with their cheesy, savory goodness. Here's how you can make the best enchiladas at home.
Ingredients:
- 2 cups cooked shredded chicken
- 2 cups enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8-10 corn tortillas
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare the Filling: In a pan, heat some olive oil and sauté the onions, bell pepper, and garlic until softened. Add the shredded chicken, cumin, chili powder, salt, and pepper. Mix well.
- Assemble Enchiladas: Warm the tortillas slightly to make them pliable. Fill each tortilla with the chicken mixture, roll it up, and place it seam-side down in a baking dish.
- Add Sauce and Cheese: Pour the enchilada sauce over the rolled tortillas, making sure they're well-covered. Sprinkle the shredded cheese on top.
