I just made this lentil spinach salad, and it’s a total winner! Hearty, nutritious, and so easy to throw together.

Ingredients:

  • 1 cup cooked lentils (green or brown)
  • 4 cups fresh spinach, roughly chopped
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
Instructions:

  1. In a large bowl, combine the cooked lentils, spinach, red onion, cherry tomatoes, and cucumber.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Sprinkle with feta cheese if using.
