I just made this lentil spinach salad, and it’s a total winner! Hearty, nutritious, and so easy to throw together.

Ingredients:
- 1 cup cooked lentils (green or brown)
- 4 cups fresh spinach, roughly chopped
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- In a large bowl, combine the cooked lentils, spinach, red onion, cherry tomatoes, and cucumber.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Sprinkle with feta cheese if using.
