  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cloves garlic, peeled and smashed
Instructions:

  1. Prepare Onions: Peel and thinly slice the red onion. Place the slices in a clean, heatproof jar or container.
  2. Make Brine: In a small saucepan, combine the white vinegar, water, granulated sugar, and salt. Add the black peppercorns, red pepper flakes (if using), and smashed garlic cloves. Bring the mixture to a simmer over medium heat, stirring to dissolve the sugar and salt.
  3. Pour Brine Over Onions: Carefully pour the hot brine over the sliced onions in the jar, making sure the onions are fully submerged.
  4. Cool: Let the jar sit at room temperature until it cools to room temperature. Once cooled, seal the jar with a lid and refrigerate.
  5. Refrigerate: Allow the onions to pickle for at least 1 hour before using, though they will be best after sitting overnight. The pickled onions will keep in the refrigerator for up to 2 weeks.
