Just made these zucchini fries, and they are SO crispy and delicious! A healthy snack that totally satisfies those fry cravings.

Ingredients:- 2 medium zucchinis, cut into fry-sized strips
- 1/2 cup flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Cooking spray or olive oil
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Dip each zucchini strip in flour, then egg, then the breadcrumb mixture, pressing to coat.
- Place the coated zucchini on the baking sheet, spray lightly with cooking spray or drizzle with olive oil.
- Bake for 20-25 minutes, flipping halfway, until golden and crispy.
