Ingredients:

  • 2 packs of house-made ramen noodles
  • 1 tablespoon sesame oil
  • 4 cloves black garlic, minced
  • 4 cups chicken or pork broth
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 eggs, soft-boiled
  • 200g pork belly, thinly sliced
  • 1 cup sliced shiitake mushrooms
  • 2 green onions, thinly sliced
  • 1 sheet nori (seaweed), cut into strips
  • Optional toppings: corn kernels, bamboo shoots, bean sprouts
Instructions:
  1. Cook the house-made ramen noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the minced black garlic and cook for 1-2 minutes until fragrant.
  3. Pour in the chicken or pork broth and water. Stir in the soy sauce, mirin, salt, and white pepper. Bring the broth to a simmer and let it cook for 10-15 minutes to allow the flavors to meld together.
  4. While the broth is simmering, prepare the soft-boiled eggs by cooking them in boiling water for 6-7 minutes, then transferring them to an ice bath to cool. Peel and set aside.
  5. In a separate pan, cook the thinly sliced pork belly until browned and crispy on both sides. Remove from the pan and set aside.
  6. In the same pan, add the sliced shiitake mushrooms and cook until tender.
  7. To assemble the ramen bowls, divide the cooked noodles among serving bowls. Ladle the hot broth over the noodles.
  8. Arrange the cooked pork belly slices, soft-boiled eggs (sliced in half), sliced shiitake mushrooms, green onions, and nori strips on top of the noodles.
  9. Garnish with any optional toppings of your choice, such as corn kernels, bamboo shoots, or bean sprouts.
  10. Serve the Black Garlic Tonkotsu Ramen hot and enjoy the comforting warmth and delicious flavors!
