Ingredients
- 800g blackberries
- 200g cooking apple
- 1 lemon, juiced
- Around 400g preserving sugar

Method
- STEP 1. Place two small saucers in the freezer; these will be used later to test the jam's setting point.
- STEP 2. Prepare the fruit by washing and draining it. Cut the apple into 2-inch pieces and put them in a large, heavy saucepan with 200ml water and lemon juice. Bring to a boil, then reduce the heat and simmer covered for 10-15 minutes until the fruit becomes soft. Stir occasionally with the back of a wooden spoon to help break down the fruit.
- STEP 3. Remove the saucepan from the heat and let it cool slightly. Transfer the fruit to a muslin-lined sieve set over a large mixing bowl. Allow the juice to drip through the sieve. Discard the contents of the sieve and save the muslin for future use.
- STEP 4. Measure the remaining liquid and return it to the saucepan. Measure out three-quarters of the total liquid weight in sugar (for example, if you have 400g of liquid, add 300g of sugar). Add the sugar to the liquid in the saucepan and stir over medium heat until the sugar completely dissolves.
- STEP 5. Increase the heat and bring the mixture to a boil, stirring occasionally. Let it boil vigorously for about 8 minutes. If using a thermometer, aim for a temperature of 105ยฐC. If not using a thermometer, test the setting point by removing a saucer from the freezer and placing a teaspoon of the liquid on it. Let it sit for a minute, then push your finger through the liquid โ if it wrinkles, the jelly is ready. If not, return the pan to the heat and test again after another minute.
- STEP 6. Pour the jelly into sterilized jars and allow it to cool completely. Sterilize the saucers by washing them in hot soapy water, rinsing, and placing them in an oven preheated to 180ยฐC (160ยฐC fan/gas mark 4) for 5 minutes. Handle them carefully and allow them to cool before storing the jars in a cool, dark place.
