- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Zest of 1 lemon
- 1/2 cup cold unsalted butter, cut into small cubes
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- Optional: coarse sugar for sprinkling on top
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest.
- Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the blueberries, being careful not to overmix the dough.
- Transfer the dough onto a lightly floured surface and shape it into a circle about 1 inch (2.5 cm) thick.
- Use a sharp knife or bench scraper to cut the circle into 8 equal wedges.
- Place the scones onto the prepared baking sheet, leaving some space between each one.
- Optional: Brush the tops of the scones with a little extra heavy cream and sprinkle with coarse sugar for a crunchy finish.
- Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown and cooked through.
- Allow the scones to cool slightly before serving.
