- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tomato paste
- 1 tablespoon brown sugar
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Chopped fresh parsley, for garnish (optional)
- Season the Short Ribs:
- Season the boneless short ribs generously with salt and black pepper on all sides.
- Sear the Ribs:
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
- Sear the short ribs in batches until they are browned on all sides. This helps to develop flavor. Remove and set aside.
- Cook the Aromatics:
- In the same pot, add diced onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Deglaze the Pot:
- Pour in beef broth and red wine (if using), scraping the bottom of the pot to loosen any browned bits (this adds flavor).
- Add Remaining Ingredients:
- Stir in Worcestershire sauce, tomato paste, brown sugar, dried thyme, and dried rosemary.
- Simmer and Bake:
- Return the seared short ribs to the pot, nestling them into the sauce.
- Bring the mixture to a simmer, then cover the pot with a lid.
- Cook in the Oven:
- Transfer the pot to a preheated oven at 325°F (160°C).
- Bake for 2.5 to 3 hours, or until the short ribs are tender and easily shred with a fork.
- Serve:
- Remove the pot from the oven. Carefully remove the short ribs and place them on a serving platter.
- Spoon the sauce over the short ribs.
- Garnish with chopped fresh parsley if desired.
