I recently made Bosnian Ćevapi, and it was an incredibly flavorful experience! These delicious grilled sausages made from a blend of ground meats are a staple in Bosnian cuisine. Served with fresh bread, onions, and ajvar (a red pepper relish), Ćevapi makes for a perfect meal that’s both hearty and satisfying. Here’s how you can make this classic dish at home:

Ingredients:​

For the Ćevapi:​

  • 1 lb (450g) ground beef
  • 1/2 lb (225g) ground lamb (or pork)
  • 3 cloves garlic, minced
  • 1 small onion, finely grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • 1 tablespoon sparkling water (to make the Ćevapi lighter)

For Serving:​

  • Lepinja or pita bread
  • Chopped raw onions
  • Ajvar (red pepper relish) or other sauces like kajmak (a type of clotted cream)

Instructions:​

1. Prepare the Ćevapi Mixture:​

  • In a large bowl, combine the ground beef and ground lamb. Add the minced garlic, grated onion, salt, black pepper, baking soda, paprika, and cayenne pepper (if using).
  • Mix the ingredients well with your hands until fully combined. Add the sparkling water and mix again to ensure the meat mixture is smooth and slightly airy.

2. Shape the Ćevapi:​

  • Take small portions of the meat mixture and shape them into small sausages about 3-4 inches long and 1 inch thick. Place them on a plate or tray lined with parchment paper.
  • Cover the Ćevapi with plastic wrap and refrigerate for at least 1 hour to let the flavors meld and the mixture firm up.

3. Grill the Ćevapi:​

  • Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
  • Grill the Ćevapi for about 4-5 minutes on each side, or until they are cooked through and have a nice char on the outside. Avoid pressing down on the Ćevapi to keep them juicy.

4. Serve:​

  • Warm the lepinja or pita bread on the grill for a minute or two until soft and slightly charred.
  • Serve the grilled Ćevapi with chopped raw onions and ajvar on the side. You can also add other accompaniments like tomatoes, fresh herbs, or kajmak.
