have this simple yet tasty bamboo dish!
Ingredients:
- 1 can (14 oz) bamboo shoots, drained and sliced (or about 1 cup fresh bamboo shoots, thinly sliced)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon rice wine (or dry white wine)
- 1 tablespoon sugar
- 1 cup chicken or vegetable broth
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- 1 green onion, sliced (for garnish)
- 1 teaspoon sesame oil (optional, for extra flavor)
Instructions:
1. Prepare the Bamboo Shoots:
- If using canned bamboo shoots: Drain and rinse them under cold water. Slice them thinly if they are not already sliced.
- If using fresh bamboo shoots: Peel and slice them thinly. Boil them in water for about 20-30 minutes until tender. Drain and let cool.
2. Cook the Aromatics:
- Heat Oil:
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add Garlic and Ginger:
- Add the minced garlic and ginger to the skillet. Cook for about 1 minute until fragrant but not browned.
3. Braise the Bamboo Shoots:
- Add Bamboo Shoots:
- Add the sliced bamboo shoots to the skillet. Stir-fry for a few minutes to coat them with the garlic and ginger.
- Add Sauces and Broth:
- Pour in the soy sauce, oyster sauce, rice wine (or dry white wine), and sugar. Stir to combine.
- Add Broth:
- Add the chicken or vegetable broth. Bring the mixture to a simmer.
- Simmer:
- Reduce the heat to low and cover. Simmer for about 15-20 minutes, or until the bamboo shoots are tender and have absorbed the flavors of the sauce.
4. Thicken the Sauce:
- Add Cornstarch Mixture:
- Stir the cornstarch mixture into the skillet. Cook for an additional 2-3 minutes, stirring frequently, until the sauce has thickened.
- Finish with Sesame Oil (optional):
- Stir in the sesame oil if using, for added flavor.
5. Garnish and Serve:
- Garnish:
- Transfer the braised bamboo shoots to a serving dish and garnish with sliced green onions.
- Serve:
- Serve hot as a side dish or part of a larger meal.
Tips:
- Adjust Sweetness and Saltiness: Modify the amount of sugar or soy sauce according to your taste preferences.
- Add Protein: For a heartier dish, you can add sliced chicken, pork, or tofu to the braise.
