Braised Chickpeas with Chard

Ingredients:​

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bunch Swiss chard, stems removed and leaves chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Pinch of red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup vegetable broth or water
  • Fresh lemon juice, for serving
  • Fresh parsley or cilantro, chopped, for garnish

Instructions:​

  1. Sauté Onion and Garlic:Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Add Swiss Chard:Stir in the chopped Swiss chard leaves. Cook for a few minutes until the chard wilts down.
  3. Add Chickpeas and Tomatoes:Add the drained chickpeas, diced tomatoes (with their juices), smoked paprika, ground cumin, ground coriander, red pepper flakes (if using), salt, and pepper. Stir to combine all the ingredients.
  4. Pour in Broth or Water:Pour in the vegetable broth or water to the skillet. Bring the mixture to a simmer.
  5. Braise the Mixture:Reduce the heat to low, cover the skillet, and let the mixture simmer gently for about 15-20 minutes, stirring occasionally. This will allow the flavors to meld together and the chickpeas to absorb the seasonings.
  6. Adjust Seasonings:Taste and adjust the seasoning with more salt, pepper, or spices if needed.
  7. Finish and Serve:Squeeze fresh lemon juice over the braised chickpeas and chard just before serving. Garnish with chopped fresh parsley or cilantro.
  8. Serve Warm:Serve the braised chickpeas with chard as is, or alongside cooked grains like rice or quinoa. It's also delicious with crusty bread for soaking up the flavorful sauce.
