Buckwheat Pancakes Recipe
Ingredients:
- 1 cup buckwheat flour
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 2 large eggs
- 4 tbsp melted butter (plus more for cooking)
- 1 tsp vanilla extract
Instructions:
- Mix Dry Ingredients: In a large bowl, whisk together the buckwheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, mix the buttermilk, eggs, melted butter, and vanilla extract until well combined.
- Blend Together: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay. Let the batter rest for about 10 minutes.
- Heat & Grease: Preheat a griddle or large skillet over medium heat. Lightly grease with butter.
- Cook the Pancakes: Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides, about 2-3 minutes per side.
- Serve Warm: Stack the pancakes high and serve with your favorite toppings—maple syrup, fresh berries, or a dollop of yogurt.
