To make Bulalo, a Filipino beef marrow stew, you'll need:


Ingredients:

  • 2 lbs beef shank with bone marrow
  • 1 onion, quartered
  • 2 corn cobs, cut into thirds
  • 2 potatoes, quartered
  • 1 small cabbage, quartered
  • 2-3 stalks of bok choy (optional)
  • Fish sauce (patis), to taste
  • Ground black pepper, to taste
  • Salt, to taste
  • Water
Instructions:

  1. In a large pot, add water (enough to cover the beef shank) and bring it to a boil.
  2. Add the beef shank to the boiling water. Let it boil for about 10 minutes, then remove any scum that rises to the surface.
  3. Lower the heat to a simmer and let the beef shank cook for about 1.5 to 2 hours until the meat is tender and falls off the bone. Add more water if needed to keep the meat submerged.
  4. Once the meat is tender, add the onion, corn cobs, and potatoes to the pot. Let it simmer until the vegetables are cooked, about 15-20 minutes.
  5. Season with fish sauce, ground black pepper, and salt to taste.
  6. Add the cabbage and bok choy (if using) to the pot and cook for another 5 minutes until the vegetables are tender but still crisp.
  7. Adjust the seasoning if needed. Serve hot with steamed rice and enjoy your Bulalo!
