To make Bulalo, a Filipino beef marrow stew, you'll need:

- 2 lbs beef shank with bone marrow
- 1 onion, quartered
- 2 corn cobs, cut into thirds
- 2 potatoes, quartered
- 1 small cabbage, quartered
- 2-3 stalks of bok choy (optional)
- Fish sauce (patis), to taste
- Ground black pepper, to taste
- Salt, to taste

- In a large pot, add water (enough to cover the beef shank) and bring it to a boil.
- Add the beef shank to the boiling water. Let it boil for about 10 minutes, then remove any scum that rises to the surface.
- Lower the heat to a simmer and let the beef shank cook for about 1.5 to 2 hours until the meat is tender and falls off the bone. Add more water if needed to keep the meat submerged.
- Once the meat is tender, add the onion, corn cobs, and potatoes to the pot. Let it simmer until the vegetables are cooked, about 15-20 minutes.
- Season with fish sauce, ground black pepper, and salt to taste.
- Add the cabbage and bok choy (if using) to the pot and cook for another 5 minutes until the vegetables are tender but still crisp.
- Adjust the seasoning if needed. Serve hot with steamed rice and enjoy your Bulalo!
