I recently whipped up a batch of Burmese Shan Noodles, and they turned out absolutely fantastic! This dish, hailing from the Shan State of Myanmar, features rice noodles with a savory and slightly spicy meat sauce, topped with fresh herbs and crunchy peanuts. It's a harmonious blend of flavors and textures that makes for a satisfying and comforting meal. Here’s how you can make these delicious Burmese Shan Noodles at home:
Ingredients:
For the Noodles and Toppings:
- 12 oz (340g) rice noodles
- 1 cup bean sprouts
- 1/2 cup roasted peanuts, crushed
- 1/2 cup fresh cilantro, chopped
- 1/2 cup green onions, chopped
- Lime wedges
For the Meat Sauce:
- 1 lb (450g) ground chicken or pork
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon turmeric powder
- 1/2 cup chicken broth or water
- 2 tablespoons vegetable oil
- Salt and black pepper, to taste
Instructions:
1. Prepare the Noodles:
- Cook the rice noodles according to the package instructions. Once cooked, drain and set aside.
2. Make the Meat Sauce:
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the chopped onion, minced garlic, and minced ginger. Sauté until the onion is translucent and the mixture is fragrant.
- Add the ground meat to the skillet. Cook until browned, breaking it up with a spoon as it cooks.
- Stir in the tomato paste, soy sauce, fish sauce, chili powder, turmeric powder, salt, and black pepper.
- Pour in the chicken broth or water, stirring well to combine. Let the sauce simmer for about 10 minutes, until it thickens slightly and the flavors meld together.
3. Assemble the Dish:
- Divide the cooked rice noodles into serving bowls.
- Spoon the meat sauce over the noodles.
- Top with bean sprouts, crushed peanuts, chopped cilantro, and green onions.
- Serve with lime wedges on the side for squeezing over the noodles.
