**Ingredients**:
- 1 lb pork loin or pork shoulder, thinly sliced
- 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
- 1-inch piece of ginger, grated
- 1 clove garlic, minced
- 2 tbsp vegetable oil
- 1 small onion, thinly sliced
- Green onions, sliced (optional, for garnish)
**Instructions**:
1. **Prepare the Marinade**:
- In a bowl, mix soy sauce, mirin, sake, sugar, grated ginger, and minced garlic.
- Add the thinly sliced pork to the marinade and let it sit for at least 15 minutes.
2. **Cook the Pork**:
- Heat vegetable oil in a large pan over medium-high heat.
- Add the sliced onion and cook until softened.
- Add the marinated pork slices to the pan, spreading them out in a single layer. Cook until the pork is browned and cooked through, about 2-3 minutes per side.
3. **Combine and Thicken**:
- Pour any remaining marinade into the pan. Cook for another 1-2 minutes, allowing the sauce to thicken slightly and coat the pork and onions evenly.
4. **Serve**:
- Serve the Buta no Shogayaki hot, garnished with sliced green onions if desired, alongside steamed rice and a side of vegetables.
