I made this butternut squash bisque the other day and wow, it's like a warm hug in a bowl! Super creamy, yet healthy. Definitely a fall favorite for me now.

Butternut Squash Bisque Recipe
Ingredients:- 1 medium butternut squash, peeled and cubed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup coconut milk (or heavy cream)
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Salt and pepper to taste
- Olive oil for sautéing
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft.
- Add cubed butternut squash and pour in vegetable broth. Bring to a boil, then reduce to a simmer.
- Cook until the squash is tender, about 15-20 minutes.
- Remove from heat and use an immersion blender to blend until smooth (or transfer to a blender in batches).
- Stir in coconut milk, cinnamon, nutmeg, salt, and pepper.
- Simmer for another 5 minutes, adjusting seasoning as needed.
