Ingredients:
For the Base:
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Coconut Topping:
- 2 cups sweetened shredded coconut
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal, or lightly grease the pan.
- Prepare the Base:
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Press the dough evenly into the bottom of the prepared baking dish.
- Bake the Base:
- Bake the base in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is set. Remove from the oven and let it cool slightly while you prepare the topping.
- Prepare the Coconut Topping:
- In a medium bowl, combine the shredded coconut, granulated sugar, melted butter, egg, and vanilla extract. Mix until well combined.
- Add the Topping:
- Spread the coconut mixture evenly over the partially baked base.
- Bake the Bars:
- Return the pan to the oven and bake for an additional 20-25 minutes, or until the coconut topping is golden brown and set.
- Cool and Slice:
- Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang (if used). Transfer to a cutting board and cut into squares or bars.
- Serve:
- Enjoy your buttery coconut bars as a sweet treat with coffee or tea, or as a delicious dessert.
