Ingredients:​

For the Base:​

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 2 cups sweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:​

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal, or lightly grease the pan.
  2. Prepare the Base:
    • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
    • Press the dough evenly into the bottom of the prepared baking dish.
  3. Bake the Base:
    • Bake the base in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is set. Remove from the oven and let it cool slightly while you prepare the topping.
  4. Prepare the Coconut Topping:
    • In a medium bowl, combine the shredded coconut, granulated sugar, melted butter, egg, and vanilla extract. Mix until well combined.
  5. Add the Topping:
    • Spread the coconut mixture evenly over the partially baked base.
  6. Bake the Bars:
    • Return the pan to the oven and bake for an additional 20-25 minutes, or until the coconut topping is golden brown and set.
  7. Cool and Slice:
    • Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang (if used). Transfer to a cutting board and cut into squares or bars.
  8. Serve:
    • Enjoy your buttery coconut bars as a sweet treat with coffee or tea, or as a delicious dessert.
