Ingredients​

  • 2 cups garlic cloves, peeled (about 2-3 heads of garlic)
  • 1 cup unsalted butter
  • 1 teaspoon fresh thyme or rosemary (optional)
  • Salt and pepper to taste

Instructions​

  1. Prepare the Garlic: Peel the garlic cloves. If you want a milder flavor, you can soak them in water for about 30 minutes before using.
  2. Melt Butter: In a medium saucepan, melt the butter over low heat.
  3. Add Garlic: Once the butter is melted, add the peeled garlic cloves and herbs (if using).
  4. Cook Slowly: Cook on low heat for about 45 minutes to 1 hour, stirring occasionally, until the garlic is soft, golden, and fragrant. Make sure the heat is low enough to avoid browning the garlic.
  5. Season: Once done, season with salt and pepper to taste.
  6. Cool and Store: Let the garlic confit cool, then transfer it to a clean jar. Pour the butter over the garlic to cover it completely.
  7. Refrigerate: Store in the refrigerator for up to 2 weeks. The garlic confit can also be frozen for longer storage.
