Egg Salad without Mayo Recipe

Ingredients:
  • 8 hard-boiled eggs, peeled and chopped
  • 1/4 cup Greek yogurt (adjust to taste)
  • 1 tablespoon Dijon mustard
  • 1 celery stalk, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper, to taste
  • Optional: 1 teaspoon lemon juice or vinegar for added zest
Instructions:
  1. Prepare the Eggs: Place eggs in a pot and cover with cold water by an inch. Bring to a boil, then cover, turn off the heat, and let sit for about 10 minutes. Transfer eggs to a bowl of ice water to cool. Peel and chop.
  2. Mix the Ingredients: In a large bowl, combine the chopped hard-boiled eggs, Greek yogurt, Dijon mustard, celery, red onion, and dill. If you're using lemon juice or vinegar, add it now. Gently stir everything together until well mixed.
  3. Season: Add salt and pepper to taste. Adjust the amount of Greek yogurt and seasoning according to your preferences. For a creamier texture, add more yogurt.
