For the Dough:
- 1 cup warm milk (110°F/45°C)
- 1 packet active dry yeast (2 1/4 teaspoons)
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 4 cups all-purpose flour
- 1 teaspoon ground cardamom
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 2 teaspoons ground cardamom
- 1/2 cup water
- 1/2 cup granulated sugar
- Pearl sugar or coarse sugar
- Prepare the Dough:
- In a large bowl, combine warm milk and yeast. Let it sit for about 5 minutes until frothy.
- Add the sugar, melted butter, and eggs to the yeast mixture. Mix until well combined.
- In a separate bowl, whisk together the flour, ground cardamom, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Prepare the Filling:
- In a small bowl, mix the softened butter, brown sugar, and ground cardamom until well combined.
- Assemble the Buns:
- Punch down the risen dough and roll it out on a floured surface into a large rectangle (about 12x18 inches).
- Spread the filling evenly over the dough.
- Starting from the long edge, roll the dough tightly into a log. Cut the log into 12-15 equal pieces.
- Place the pieces cut-side up on a baking sheet lined with parchment paper. Cover with a towel and let rise for another 30 minutes.
- Bake the Buns:
- Preheat the oven to 375°F (190°C).
- Bake the buns for 20-25 minutes until golden brown.
- Prepare the Glaze:
- While the buns are baking, combine the water and sugar in a small saucepan. Bring to a boil and simmer until the sugar is dissolved.
- Finish the Buns:
- Brush the hot buns with the sugar glaze and sprinkle with pearl sugar or coarse sugar.
- Let the buns cool slightly before serving.
