This granola is perfect for breakfast, a snack, or even a topping for yogurt or smoothie bowls. It’s packed with wholesome ingredients and warm spices, making it a nutritious and tasty treat.

- 2 cups old-fashioned oats
- 1 cup grated carrots
- 1 cup chopped pecans
- ½ cup shredded coconut
- ¼ cup maple syrup
- ¼ cup melted coconut oil
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup raisins
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine the oats, grated carrots, pecans, shredded coconut, cinnamon, ginger, nutmeg, and salt.
- Add Wet Ingredients: Pour in the maple syrup and melted coconut oil. Stir until all the ingredients are well coated.
- Bake: Spread the mixture evenly on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy.
- Add Raisins: Remove from the oven and let it cool completely. Once cooled, stir in the raisins.
- Store: Store the granola in an airtight container at room temperature for up to a week.
