Ingredients:​

  • 1 large cassava (also known as yuca)
  • Vegetable oil for frying
  • Salt to taste

Instructions:​

  1. Peel the cassava and cut it into thin slices using a sharp knife or a mandoline slicer. Aim for slices about 1/8 inch thick.
  2. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).
  3. Carefully add the cassava slices to the hot oil in batches, making sure not to overcrowd the fryer or pot.
  4. Fry the cassava slices for 5-7 minutes or until they turn golden brown and crispy.
  5. Use a slotted spoon or tongs to remove the fried cassava chips from the oil and transfer them to a paper towel-lined plate to drain excess oil.
  6. Sprinkle the hot chips with salt to taste while they're still warm.
  7. Repeat the frying process with the remaining cassava slices until all are cooked.
  8. Allow the cassava chips to cool slightly before serving.
